How to Make a Barrel-Aged Old Fashioned

A barrel-aged Old Fashioned is part cocktail, part patience — and it's one of the most rewarding things you can do with a small oak barrel. Instead of aging straight whiskey, you age the finished cocktail. The oak softens the edges, marries the bitters into the whiskey, and adds a depth no stirred drink can match. Here's the batch we recommend.

What You'll Need

  • A cured 1L oak barrel (this recipe scales easily — just multiply for 2L or 5L)
  • 750ml bourbon or rye whiskey (a solid 90–100 proof bottle works beautifully)
  • 100ml (about 3.5 oz) rich demerara syrup — 2 parts demerara sugar to 1 part water, dissolved
  • 10ml (about 2 teaspoons) Angostura bitters
  • Orange twists and cherries, for serving

New to barrels? Cure yours first — fill it with hot water for 24–48 hours until the staves swell and seal, then drain it completely before its first cocktail.

The Method

  1. Mix the batch. In a pitcher, combine the whiskey, demerara syrup, and bitters. Stir until fully blended. Taste it now — this is your baseline, and you'll love comparing it later.
  2. Fill the barrel. Pour the batch through the bung hole, top off with a splash of extra whiskey if there's room, and seat the bung.
  3. Age it. In a 1L barrel, start tasting at 1 week. Most batches hit their sweet spot between 2 and 4 weeks: the spice softens, the orange and vanilla notes from the oak come forward, and the whole drink turns silkier. Larger barrels take proportionally longer — a 5L might need 4–8 weeks.
  4. Bottle the peak. When it tastes right, drain the barrel into clean glass bottles. Left in the barrel, the cocktail will keep extracting oak and can turn woody. Bottled, it keeps for months.
  5. Serve it properly. Pour 2.5–3 oz over a large ice cube, stir briefly to chill, express an orange twist over the top, and drop in a cherry.

Tips From Experience

  • Don't overfill the calendar. Small barrels work fast. Weekly tastings protect you from an over-oaked batch.
  • Keep the barrel topped up. Evaporation (the angels' share) concentrates flavors and leaves headspace. A small top-up of whiskey keeps things balanced.
  • Reuse the barrel. After the first batch, refill it right away — the second batch will age a touch gentler and is a great place to experiment (try rye instead of bourbon, or a teaspoon of orange bitters in the mix).
  • Think beyond the Old Fashioned. The same barrel loves a Manhattan, a Boulevardier, or a simple batch of your house cocktail for holiday guests.

Every Oak Barrels, Ltd. barrel — 1L through 20L — includes a stand, bung, and wooden spigot, so your cocktail program can start the day it arrives.
