How to Make Vanilla Extract in a Small Oak Barrel

Store-bought vanilla extract does the job. Barrel-aged vanilla extract tastes like something else entirely. In a small oak barrel, the extract ages as it extracts, picking up oak depth while the vanilla beans do their work. The result is richer than a jar on a shelf, and it makes a gift people actually use.

All you need is a 1L vanilla extract barrel, a base spirit, and vanilla beans.

What you need

  • 1L Oak Vanilla Barrel ($39.95)
  • 1 quart 80 proof vodka, bourbon, or rum
  • Vanilla beans: 24 beans (96 g / 3.2 oz) for 1X strength, or 48 beans (192 g / 6.8 oz) for 2X strength (when cooking with 2X, use only half the amount the recipe calls for)
  • 1 tsp corn syrup (optional)

Cure the barrel first

Before you start, cure the barrel: fill it completely with hot water and let the wood swell for 24 to 48 hours, checking for leaks. Small drips early on are normal and stop as the staves expand. Drain, rinse, and fill with your extract mixture right away … never leave a cured barrel sitting empty.

Full step-by-step curing instructions are in the cure guide.

Make the extract

  • Put finely chopped beans into the prepared barrel.
  • Pour in the vodka (or bourbon or rum) and stir. Add the optional corn syrup if desired.
  • Fit the bung snugly into the barrel for an airtight closure.
  • Store in a cool place and gently shake or swirl the barrel once a week, holding your hand over the bung to keep it in place.

When it is ready

You will be able to start using your extract in approximately 4 to 6 weeks. Taste it as it goes and decant when it reaches your personal taste.

You can also keep the vanilla in the barrel … just remember it will give some vanilla to the "angels share," so top it off monthly with liquor to compensate. Made and kept this way, your vanilla will last for years.

A gift that keeps giving

A barrel of homemade extract is a baker's gift with a story: the barrel, the beans, and the weeks of waiting. Pair it with a note about when it was started and when it will be ready to use, and it beats another bottle off a shelf.
